Greek Inspired Chicken Wrap

Ingredients

Chicken (meal prepped for 5 days:
  • 26 oz chicken
  • 2 tsp cornstarch
  • 1/2 TBSP High heat oil (like grapeseed oil or avocado oil)
  • 3-6 TBSP water
Spinach (make fresh each day)
  • 20g Spinach
  • 10g sundried tomatoes (in olive oil from Trader Joes)
  • 14g low fat feta
  • salt to taste
Greek Yogurt Sauce (meal prepped for 5 days):
  • 1 cup greek yogurt
  • Generous amount of Sumac seasoning
  • Salt
  • 1 whole lemon juice
Other Ingredients:
  • 5 Mission Carb Balance Tortillas

Instructions:

Chicken:
  1. Make a slurry of the cornstarch, oil, and water.
  2. Slice the chicken and salt it on both sides generously
  3. Mix the cornstarch slurry into the chicken. This will be watery.
    • This is a Chinese method of cooking that helps the chicken retain moisture. Great for keeping chicken moist for meal prep and avoiding the gross dry chicken that comes with prepping it a day out.
  4. Spray a pan and cook until browned and there is no liquid left in the pan.
    • It may seem like the chicken coating sticks to the pan. That’s ok. Soak your pan after for an easier clean up.
  5. Divide evenly for 5 days.
Greek Yogurt Sauce:
  1. In a tuppeware container, place 1 cup of yogurt, a generous amount of sumac seasoning, the juice of 1 lemon, and salt to taste. Mix together.
  2. Divide evenly for 5 days.
Spinach:
  1. Dice sun dried tomatoes and throw in a hot pan. The oil from the tomatoes should be sufficient to make it nonstick
  2. Throw in spinach and feta and salt to taste. Saute until spinach is cooked.
